The beetroots had been in the ground for quite a few months - planted from a "strip of seeds" but only five beetroots appeared (I was expecting about 15 - ripped off)! The carrots have been in their pot since the beginning of July and we did pull a few up about 6 weeks ago but they were tiny - like (tasty) toothpicks.
My zucchinis have been hit and miss (no bees to pollinate = hand pollinating like a weirdo + a lack of something in the soil = tough zucchini times on the balcony). That said I do seem to get a few good ones each week from my 5 plants despite the plants not being the healthiest specimens. AND my baby spinach continues so thrive...it's like a never-ending spinach supply.
So what did I do with this edible bounty? Why a roast vegetable salad of course!
Forgive the terrible photography (lit by the stove's range-hood) and my awful food styling - Donna Hay would NOT be impressed! I tossed all root veggies + zucchini in a mix of olive oil along with some garlic and Spanish onion and popped the whole lot in the oven. After the veggies were cook they were tossed in with the baby spinach and some low-fat feta. YUM!
